Smoked Pork Loin & Grilled Pork Chops

  1. Slice four 1-inch thick slices from the end of the Swift Meats Boneless Pork Loin and set them aside.
  2. Make the seasoning mix by combining:
    • 2 tbsp Flakey Salt
    • 2 tsp Smoked Paprika
    • 2 tsp Onion Powder
    • 2 tsp Garlic Powder
    • 2 tsp Dried Rosemary
    • 2 tsp Coarse Black Pepper
  3. Apply Worcestershire Sauce as a binder to the remaining pork loin and generously coat it with the seasoning mix. Let it rest for 30 minutes.
  4. Prepare the marinade for the pork chops using:
    • 2 Boneless Pork Chops
    • ¼ cup Olive Oil
    • 1 tsp Stone Ground Mustard
    • 1 tbsp Soy Sauce
    • 1 tsp Lemon Zest
    • 1 tsp Parsley
    • 1 tsp Thyme
    • ¼ tsp Salt
    • ¼ tsp Coarse Black Pepper
    • 1 tsp Minced Garlic

    Note: Marinate for at least 1 hour, preferably 8 hours.

  5. Place the seasoned Boneless Pork Loin on a smoker or grill at 375°F and cook until it reaches an internal temperature of 145°F (about 45 minutes). Remove and let it rest loosely covered.
  6. Increase the grill temperature to 475°F and cook the marinated Boneless Pork Chops until they reach an internal temperature of 145°F. Remove and let them rest.
  7. Serve the grilled Boneless Pork Chops alongside slices of Smoked Pork Loin with grilled vegetables and enjoy.
