  1. Remove the membrane from the back of the ribs and pat dry.
  2. In a small bowl, combine brown sugar, smoked paprika, salt, pepper, garlic powder, onion powder, chili powder, and dry mustard.
  3. Brush ribs lightly with olive oil and generously coat both sides with the seasoning mixture.
  4. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.
  5. Preheat grill for indirect cooking and maintain a temperature between 225°F and 250°F.
  6. Place ribs bone-side down on the cooler side of the grill. Close the lid and cook for 2 hours.
  7. Wrap ribs tightly in foil and return to the grill. Continue cooking for 1½–2 hours, until tender and the meat begins pulling back from the bones.
  8. Unwrap the ribs and brush with barbecue sauce, if desired. Grill for an additional 10–15 minutes until the sauce is caramelized.
  9. Remove from grill and let rest for 10 minutes before slicing and serving.
