Directions:

  1. Heat Smoker: Set up your smoker to 250°F with an indirect heat zone, using fruit wood like apple, cherry or peach.
  2. Season: Rub each rack of ribs on both sides with 1 tablespoon soy sauce, 1 tablespoon Maui Wowee and 1 tablespoon Pork Rub.
  3. Smoke: Place the ribs on the smoker over indirect heat and smoke at 250°F for 3 1/2 hours.
  4. Make the Sauce: While the ribs are smoking, combine all of the sauce ingredients in a saucepot. Cook over medium-low heat, until all of the sugar is dissolved, about 10-15 minutes.
  5. Sauce Ribs: After the ribs have been smoking for 3 1/2 hours, brush them with the sauce. Keep smoking them for 30 more minutes, or until the internal temperature of the meat reaches 205°F.
  6. Final Touches: Remove the ribs from the grill. Let them rest for 10-15 minutes before slicing. Garnish with green onions and sesame seeds and serve with rice.
