Garlic Dijon Pork Tenderloin with Roasted Sweet Potato and Pepper Jumble

In a small bowl, mix Dijon mustard, minced garlic, olive oil, thyme, salt, and black pepper.
Rub the mixture evenly over the Swift Pork Tenderloin. Let sit while preparing the vegetables.
Step 2: Prepare the Roasted Vegetables
In a large bowl, toss the diced sweet potatoes and sliced bell peppers with olive oil, salt, and black pepper.
Spread the vegetables onto a lined baking sheet in an even layer.
