Instructions

Step 1: Marinate the Pork Tenderloin

  1. Preheat oven to 400°F.
  2. In a small bowl, mix Dijon mustard, minced garlic, olive oil, thyme, salt, and black pepper.
  3. Rub the mixture evenly over the Swift Pork Tenderloin. Let sit while preparing the vegetables.

Step 2: Prepare the Roasted Vegetables

  1. In a large bowl, toss the diced sweet potatoes and sliced bell peppers with olive oil, salt, and black pepper.
  2. Spread the vegetables onto a lined baking sheet in an even layer.

Step 3: Roast the Pork & Vegetables

  1. Place the pork tenderloin on a separate baking sheet or in a roasting pan.
  2. Roast both the pork and vegetables for 25-30 minutes, flipping the vegetables halfway through.
  3. Check that the pork reaches an internal temperature of 145°F before removing from the oven.

Step 4: Rest & Serve

  1. Let the pork tenderloin rest for 5 minutes before slicing into medallions.
  2. Serve alongside the roasted sweet potatoes and bell peppers.
