  1. Combine the soy, maple syrup, 1 tablespoon of olive oil, ginger and garlic in a 9 X 13 pan. Add the steak and turn to coat. Let stand 15 minutes at room temperature or refrigerate 1 hour.
  2. Preheat a grill to high and oil the grates. Remove the steak from the marinade and pat dry. Sprinkle with the salt and pepper and grill until 130°F. for medium rare, 3-4 minutes per side. Remove to cutting board and let rest 5 minutes. Slice the steak against the grain into thin strips and transfer to a platter. Top with the arugula and tomatoes, drizzle with additional olive oil, sprinkle with salt and pepper and serve with the lemon wedges.
