  1. In a medium bowl, combine pineapple, ginger, garlic, soy sauce, honey, apple cider vinegar, and jalapeño. Mix well and set aside.
  2. Remove the silver skin from Swift Meats Pork Tenderloin, if desired, then cut the tenderloin into cubes.
  3. Add the pork to the marinade and refrigerate for at least 1 hour, or overnight for more flavor.
  4. While the pork marinates, prepare the diced white onion, chopped cilantro, and garlic mayo by mixing or blending mayonnaise, minced garlic, lemon juice, and salt to taste. Prepare side dishes, if using.
  5. Turn the oven broiler on high and line a baking sheet with aluminum foil.
  6. Using a slotted spoon, arrange the marinated pork in an even layer on the baking sheet, adding some pineapple pieces on top. Place the sheet on the top rack of the oven.
  7. Broil for 3 minutes, then remove the pan and shake it gently. Return to the oven and broil for 2 more minutes, until the edges of the pork are lightly browned. Do not overcook.
  8. Remove from the oven and let the pork cool slightly.
  9. Warm the blue corn tortillas.
  10. Assemble the tacos with two tortillas, pork and pineapple, garlic mayo, onion, and cilantro. Serve with side salad and black beans, if desired.
