Instructions

Step 1: Marinate the Pork

  1. In a small bowl, mix olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper.
  2. Rub the mixture all over the Swift Pork Tenderloin. Let marinate for at least 10 minutes (or up to 1 hour for deeper flavor).

Step 2: Sear & Roast the Pork

  1. Preheat oven to 400°F.
  2. Heat a skillet over medium-high heat and add a drizzle of olive oil.
  3. Sear the pork tenderloin for 2-3 minutes per side until golden brown.
  4. Transfer to a baking sheet and roast for 12-15 minutes, or until the internal temperature reaches 145°F.
  5. Remove from the oven and let rest for 5 minutes before slicing.

Step 3: Prepare the Tomato-Olive Relish

  1. In a bowl, mix cherry tomatoes, Kalamata olives, olive oil, red wine vinegar, and chopped parsley.
  2. Toss well and let sit for a few minutes to allow the flavors to blend.
