  1. Preheat the oven to 350ºF.
  2. Season ribeye steaks with salt and pepper.
  3. Slice your bread into ½ inch pieces. Place on a sheet pan and toast for 5-10 minutes. 
  4. Heat a cast iron skillet with a drizzle of olive oil until hot. Add your steak and sear for 3 minutes per side, then transfer to the oven for another 1-2 minutes, or until your steaks reach the recommended internal temperature of 145ºF.
  5. Remove the steaks from the oven and let cool for 10-15 minutes—thinly slice and set to the side. 
  6. Once your bread is toasted, top each slice with burrata, steak slices, chives, and balsamic vinegar.
