Sweet and Spicy Swift Bacon-Wrapped Pork Tenderloin

Directions:

  1. Preheat the oven to 425ºF. Coat a sheet pan with cooking spray.
  2. Combine smoked paprika, garlic powder, chili powder, chipotle chili, and salt in a small bowl. Using a sharp knife, trim off any silver skin from the Swift Pork Tenderloin. Rub chili mixture over pork to coat.
  3. Place Swift Double Smoked Thick Cut Bacon vertically on a surface. Fold the edges of the Swift Bacon over the pork so the pork is wrapped in the Swift Bacon.
  4. Place the pork on the prepared sheet pan seam side down. Brush the Swift Bacon with maple syrup.
  5. Roast the Swift Pork Tenderloin for 20 minutes. Remove the pork from the oven and brush bacon with the syrup pan juices. Return the pork to the oven and continue until you reach desired doneness (145ºF internal temperature).
  6. Remove the pork from the oven and drizzle with the remaining 2 Tbsp of maple syrup.
  7. Slice and enjoy!
