Marinade / Glaze (Reserve some for basting)

Instructions

Prep & Marinate

  1. Trim pork and cube evenly.
  2. Whisk marinade until smooth.
  3. Reserve about ⅓ of the sauce for basting.
  4. Toss pork in remaining marinade.
  5. Refrigerate at least 1 hour, ideally 4–8 hours.

Build & Grill

  1. Thread pork tightly onto skewers.
  2. Set up a two-zone grill (medium-high direct heat + indirect).
  3. Sear skewers over direct heat 2–3 minutes per side until lightly charred.
  4. Move to indirect heat and cook until internal temp reaches 140–145°F.

Glaze & Finish

  1. Simmer reserved sauce 5–7 minutes until thick.
  2. Brush skewers during the final 2–3 minutes only.
  3. Pull at 145°F and rest 5 minutes before serving.

Serve

  1. Finish with herbs and serve with rice, grilled pineapple, or extra glaze on the side.
