2 lb Swift Meats Pork Tenderloin, cut into 1½–2 inch cubes
Skewers (soak wooden skewers 30–45 minutes)
Marinade / Glaze (Reserve some for basting)
½ cup chipotle pineapple BBQ sauce
¼ cup honey
3 tbsp brown sugar
3 tbsp soy sauce
2 tbsp tomato paste
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
½–1 tsp red pepper flakes
Instructions
Prep & Marinate
Trim pork and cube evenly.
Whisk marinade until smooth.
Reserve about ⅓ of the sauce for basting.
Toss pork in remaining marinade.
Refrigerate at least 1 hour, ideally 4–8 hours.
Build & Grill
Thread pork tightly onto skewers.
Set up a two-zone grill (medium-high direct heat + indirect).
Sear skewers over direct heat 2–3 minutes per side until lightly charred.
Move to indirect heat and cook until internal temp reaches 140–145°F.
Glaze & Finish
Simmer reserved sauce 5–7 minutes until thick.
Brush skewers during the final 2–3 minutes only.
Pull at 145°F and rest 5 minutes before serving.
Serve
Finish with herbs and serve with rice, grilled pineapple, or extra glaze on the side.
