Spicy Pork Cheddar Tortilla Kabobs with Jalapeño Lime Crema
These chorizo-spiced ground pork pinwheel kabobs are stuffed with fresh jalapeños, sharp cheddar, cilantro, and green onions, all rolled in flour tortillas and seared until the edges crisp and the cheese melts. A drizzle of jalapeño-lime crema adds bright heat and tang. Fast, fun, and perfect for tailgates or game day spreads.
2 fresh jalapeños, finely diced (seeds removed for less heat)
1 cup shredded sharp cheddar cheese
¼ cup fresh cilantro, chopped
½ cup green onions, diced
1 tbsp chorizo seasoning
4 large flour tortillas
Topping: drizzle of jalapeño lime crema
Directions:
Heat a skillet over medium-high heat and cook the Swift Ground Pork with chorizo seasoning until browned and cooked through. Stir in the diced jalapeños, cilantro, and green onions, then remove from heat and let it cool slightly.
Lay out the flour tortillas and sprinkle a generous layer of cheddar cheese over each one. Spoon the pork mixture evenly across the tortillas, then roll them up tight.
Slice the rolls into 1-inch pinwheels and thread them onto skewers to create kabobs.
Place kabobs back on a hot skillet or grill for a quick sear, just enough to melt the cheese and crisp the edges.
Finish with a drizzle of jalapeño lime crema over the top. Serve warm and enjoy. These are perfect for tailgates, game day, or anytime you’re feeding a hungry crew.
