1.5 lbs Swift Beef Flat Iron Steak, sliced into thin strips
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small broccoli crown, cut into florets
1 zucchini, sliced into half moons
1 small yellow onion, sliced
3 cloves garlic, minced
1 tsp Italian seasoning
½ tsp smoked paprika
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish
Cooked rice or noodles, for serving (optional)
Instructions
Slice the Swift Beef Flat Iron Steak into thin strips and season with the Italian seasoning, smoked paprika, salt, and black pepper.
Heat 1 tablespoon of olive oil in a large cast iron skillet over medium-high heat.
Add the steak in a single layer and sear for 2–3 minutes per side until browned. Work in batches if needed. Transfer to a plate.
Add the remaining olive oil to the skillet, then cook the onion, bell peppers, broccoli, zucchini, and garlic for 4–5 minutes, stirring occasionally, until the vegetables are crisp-tender.
Return the steak to the skillet and toss with the vegetables until heated through, about 2 minutes.
Taste and adjust seasoning as needed.
Garnish with fresh parsley and serve immediately over cooked rice or noodles, if desired.
