Swift Inside Skirt Steak for Tacos

Ingredients:- 1 5-7 lb Swift Inside Skirt Steak
- 1 C Lime Juice
- 1 C Orange Juice
- 1 C Soy Sauce
- 1-2 Jalapeño Peppers
- 1 Small Yellow Onion
- 2 Cloves Garlic
- 2 T Salt
- 2 T Pepper
- Tortillas, Sliced Red Onion, Sliced Jalapeños and Chopped Cilantros for Serving
Directions:- In a blender, combine juices, soy sauce, jalapeño, yellow onion and garlic. Blend until well combined.
- Remove steak from packaging and place in a resealable bag with the marinade ingredients.
- Remove air from bag before sealing and place in refrigerator for 1-2 hours.
- Heat grill to white hot coals, about 400°F.
- Remove steak from marinade and pat dry.
- Salt and pepper each side of steak and place on hot grill.
- Cook for 5 minutes and turn steak over.
- Cook until internal temp reaches 130°F.
- Remove from heat and let rest for 10 minutes until internal temp reaches 135°F.
- Thinly slice steak against the grain and serve with tortillas, onion, jalapeños and cilantro.
How to Serve: Slice and serve in corn or flour tortillas and add your favorite taco toppings.
