  1. Preheat a grill to high and oil the grates. Sprinkle the steak with salt and pepper. Soak bamboo skewers while the grill is heating.
  2. In a food processor or blender, combine the parsley, cilantro and oregano and process until finely chopped. With the motor running, pour in the olive oil and vinegar until well blended. Transfer to a bowl and season with salt and pepper.
  3. Thread steak onto skewers, sprinkle with salt and pepper and grill until medium-rare, about 6-8 minutes total, turning to brown each side. Drizzle with some of the chimichurri sauce and sprinkle with the chile. Serve additional sauce on the side.
