Ground Pork Black Bean Enchiladas with Green Chile Sauce
These Ground Pork Black Bean Enchiladas are packed with flavor, featuring seasoned Swift Ground Pork, hearty black beans, and a zesty green chile sauce. Wrapped in warm tortillas and topped with melty cheese, this dish is a comforting and delicious twist on a Mexican classic.

Heat olive oil in a skillet over medium-high heat. Add diced onion and cook for 2-3 minutes until softened.
Stir in minced garlic, ground cumin, and chili powder, cooking for another 30 seconds until fragrant.
Add Swift Ground Pork and cook for 5-7 minutes, breaking it apart with a spoon until browned.
Stir in black beans and cook for another 2 minutes. Remove from heat.
Step 2: Assemble the Enchiladas
Pour ½ cup of green chile enchilada sauce into the bottom of a baking dish.
Place a scoop of the pork and black bean filling into each tortilla, roll tightly, and place seam-side down in the dish.
Pour the remaining enchilada sauce over the top, ensuring all tortillas are covered.
Sprinkle shredded cheese evenly over the enchiladas.
Step 3: Bake the Enchiladas
Cover with foil and bake for 15 minutes.
Remove foil and bake for another 5-7 minutes until the cheese is melted and bubbly.
Step 4: Garnish & Serve
Remove from oven and let cool slightly.
Garnish with fresh cilantro before serving.
