In a large bowl, mix together Swift Ground Pork, panko breadcrumbs, egg, cilantro, cumin, salt, and black pepper.
Roll into 1-inch meatballs (about 16 total).
Heat a large skillet over medium-high heat and add a drizzle of oil.
Sear the meatballs for 4-5 minutes, turning occasionally, until browned on all sides. Remove and set aside.
Step 2: Make the Curry Sauce
In the same skillet, melt butter and sauté the chopped onion for 2-3 minutes until soft.
Add minced garlic and curry powder, stirring for 30 seconds until fragrant.
Pour in coconut milk and red pepper flakes (if using). Stir and bring to a gentle simmer.
Step 3: Simmer the Meatballs
Return the meatballs to the skillet, ensuring they are fully coated in the sauce.
Cover and simmer for 10 minutes, stirring occasionally, until meatballs are cooked through (internal temperature of 160°F).
