Place the pork loin on a cutting board and carefully butterfly it by slicing horizontally, stopping about ½ inch from the edge. Open it like a book.
Cover with plastic wrap and gently pound with a meat mallet to an even thickness.
Drizzle with olive oil and season both sides with salt, black pepper, and Italian seasoning.
Step 2: Make the Filling
In a bowl, mix together spinach, sun-dried tomatoes, mozzarella, garlic, Parmesan, and red pepper flakes (if using).
Step 3: Stuff & Roll the Pork Loin
Spread the filling evenly over the pork loin, leaving a 1-inch border.
Carefully roll the pork loin tightly from one end to the other.
Secure with kitchen twine at 1-inch intervals to keep the stuffing in place.
Step 4: Roast the Pork Loin
Place the stuffed pork loin in a roasting pan or on a baking sheet lined with foil.
Roast for 35-40 minutes, or until the internal temperature reaches 145°F.
Remove from the oven and let rest for 5-10 minutes before slicing.
Step 5: Serve & Enjoy
Slice the pork loin into rounds and serve warm.
