  1. Pat chops dry with paper towels and sprinkle with salt and pepper. Heat 1 Tbsp of oil in a skillet over medium-high heat until just smoking. 
  2. Place the chops in the skillet and brown on both sides, 8 to 10 minutes; transfer to plate.
  3. Add maple syrup, vinegar, and Dijon mustard into the same skillet and cook until thickened; about 2 minutes. Return the pork chops to the skillet along with accumulated juices and simmer, turning often, until glaze-coated chops reach an internal temperature of 145ºF.
