4 Swift Boneless Pork Loin chops (about 1-inch thick)
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
½ tsp salt
½ tsp black pepper
Juice of 1 lemon
For the Mediterranean Topping:
1 cup cherry tomatoes, halved
½ cup Kalamata olives, sliced
¼ cup crumbled feta cheese
1 tbsp fresh parsley, chopped
Instructions
Step 1: Marinate the Pork Chops
In a small bowl, mix olive oil, garlic, oregano, thyme, salt, black pepper, and lemon juice.
Rub the mixture evenly over both sides of the pork chops. Let marinate for at least 10 minutes (or up to 1 hour for deeper flavor).
Step 2: Cook the Pork Chops
Preheat a grill or pan over medium-high heat.
Cook pork chops for about 4-5 minutes per side, or until the internal temperature reaches 145°F.
Remove from heat and let rest for 5 minutes.
