Once pork reaches an internal temperature of 175°F, wrap in foil and place back onto the grill for an additional 2 hours, or until it reaches an internal temperature of 203°F.
Place the pork in a cooler (without ice) with the foil and a towel wrapped around it for 2 hours.
Remove pork from cooler and shred. Cook bacon until crisp and fat is fully rendered.
Toast buns, then top with pulled pork, BBQ sauce, bacon, pickles, red onion, more bacon and additional BBQ sauce.
Serve.
