Slice four 1-inch thick slices from the end of the Swift Meats Boneless Pork Loin and set them aside.
Make the seasoning mix by combining:
2 tbsp Flakey Salt
2 tsp Smoked Paprika
2 tsp Onion Powder
2 tsp Garlic Powder
2 tsp Dried Rosemary
2 tsp Coarse Black Pepper
Apply Worcestershire Sauce as a binder to the remaining pork loin and generously coat it with the seasoning mix. Let it rest for 30 minutes.
Prepare the marinade for the pork chops using:
2 Boneless Pork Chops
¼ cup Olive Oil
1 tsp Stone Ground Mustard
1 tbsp Soy Sauce
1 tsp Lemon Zest
1 tsp Parsley
1 tsp Thyme
¼ tsp Salt
¼ tsp Coarse Black Pepper
1 tsp Minced Garlic
Note: Marinate for at least 1 hour, preferably 8 hours.
Place the seasoned Boneless Pork Loin on a smoker or grill at 375°F and cook until it reaches an internal temperature of 145°F (about 45 minutes). Remove and let it rest loosely covered.
Increase the grill temperature to 475°F and cook the marinated Boneless Pork Chops until they reach an internal temperature of 145°F. Remove and let them rest.
Serve the grilled Boneless Pork Chops alongside slices of Smoked Pork Loin with grilled vegetables and enjoy.
