Slice four 1-inch thick slices from the end of the Swift Boneless Pork Loin and set them aside.
Make the seasoning mix by combining:
2 tbsp flakey salt
2 tsp smoked paprika
2 tsp onion powder
2 tsp garlic powder
2 tsp dried rosemary
2 tsp black pepper, coarsely ground
Apply worcestershire sauce as a binder to the remaining pork loin and generously coat it with the seasoning mix. Let it rest for 30 minutes.
Prepare the marinade for the pork chops using:
2 boneless pork chops
¼ cup olive oil
1 tsp stone ground mustard
1 tbsp soy sauce
1 tsp lemon zest
1 tsp parsley
1 tsp thyme
¼ tsp salt
¼ tsp black pepper, coarsely ground
1 tsp garlic, minced
Note: Marinate for at least 1 hour, preferably 8 hours.
Place the seasoned Boneless Pork Loin on a smoker or grill set to 375°F and cook until it reaches an internal temperature of 145°F (about 45 minutes). Remove from heat, loosely cover with foil, and let rest.
Increase the grill temperature to 475°F and cook the marinated Boneless Pork Chops until they reach an internal temperature of 145°F. Remove from heat and let rest.
Serve the grilled Boneless Pork Chops alongside slices of Smoked Pork Loin with grilled vegetables.
